Natalie Sideserf Austin, TX

Among the many talented instructors is Natalie Sideserf from Austin, Tx who will be leading a class on designing and creating a realistic chimpanzee bust. Siderserf’s class will unlock for participants the secrets of hyper-realistic cake sculpting. Using a fine art approach, Sideserf will work with class participants to develop techniques used to replicate a chimpanzee’s facial features with a focus on proportion, realism and hand painting. All executed in sugar!
For those of us who thought cake artistry was all buttercream and fondant, participants can learn to master

the advanced techniques of airbrushing. From Colorado, Steven Barela will take class participants to the next level of artistry and skill. Using the latest tools in air compressors, stencils, and templates, Barela promises to demonstrate the good, the bad and the ugly of advanced airbrushing techniques.
One of the most challenging tasks for sugar artists is creating a 3D cake which usually involved

suspending an edible concoction in thin air. Thanks to Benny Rivera, owner of City Cake in New York City, participants will learn how to create a strong and stable support structure system for 3D cake designs and how to work with modeling chocolate to create amazing and gravity defying details.
Certainly the most sought-after sugar artistry involves anything wedding related and Mark Desgroseilliers, from Montreal, Canada, will demonstrate for participants the fine art of creating sugar ranunculus. Made from layer upon delicate layer of crepe paper thin petals, these sugar creations are colored in rich, warm hues of raspberry pink, peachy yellow and bronze. Created from sugar, for sure, but as delicate as the real thing.
The many other talented instructors bring a lifetime of professional experience and practical application in the fast evolving world of sugar art.
